While his friends partied, Pankaj focused on learning. He first earned a Master’s degree in Hospitality, knowing that “You can’t run a kitchen without knowing how to run a business.” Next came an MBA, followed by a Master’s in Finance – after all, as he joked, “Someone had to balance the books after I spent too much on saffron!”

By 2020, his vision came to life with the launch of Bell Bottom Indian, named after the flamboyant retro fashion that symbolises boldness and individuality – qualities that define Pankaj himself. His mission was clear: to create an Indian brand that honoured India’s rich culinary heritage while adding a modern, health-conscious twist. “Why can’t butter chicken feel like a hug and a workout at the same time?” he often laughed.
In 2023, Pankaj was recognised as Scotland’s Curry Entrepreneur of the Year, celebrating his innovative approach to Indian cuisine and his visionary leadership in hospitality. His restaurants have since delighted thousands of patrons, redefining the dining experience in Edinburgh and beyond.
Later, he launched Bell Bottom Eatery, his soul project. But the journey wasn’t easy. Pankaj still tells stories of burning the midnight oil – and occasionally a few rotis – as he experimented to perfect recipes that blended tradition with innovation. With its vibrant interiors, modern branding, and killer playlist, Bell Bottom Eatery quickly became a favourite among Edinburgh locals and visitors alike.
Today, Bell Bottom Eatery is more than a restaurant. It reflects Pankaj’s journey from dreamer to visionary – redefining Indian street food and uniting people through flavour. As he says,
